Creamy, dreamy peach with a kiss of vanilla and a swirl of bright, tangy raspberry…
These raspberry peach popsicles are what popsicle dreams are made of!
Serves: about 10 popsicles.
Ingredients
For the Peach Layer:
- 1½ cups peaches
- ½ banana
- ¼ cup full fat coconut milk (or dairy milk)
- ½-3/4 cup orange juice
- ¼ tsp vanilla extract
- 1 Tbsp honey or agave (as needed)
- 2 cups raspberries (fresh or frozen)
- 2-3 Tbsp honey or agave (or, to taste)
- juice of ½ lemon
- ½ cup water
Instructions
For the peach layer:
Place all ingredients into a blender and puree until smooth. Taste and add honey as needed, blending well to combine. Set aside.
For the raspberry layer:
Place all ingredients into a blender and puree until smooth. Taste and blend in additional honey, as needed.
For the smoothest texture, strain raspberry layer through a fine mesh sieve to remove the seeds.
To assemble:
Alternate pouring peach and raspberry smoothie mixtures into the popsicle molds.
For more distinct layers, use a funnel or spoon to gently add the mixtures. If you pour straight from a blender or liquid measuring cup, they're more likely to combine.
Freeze at least 3-4 hours, or until completely firm.
