Everything Bagel Scones KETO (Carolyn)

Delicious savory keto scones topped with everything bagel seasoning. Tender and grain-free, they pair perfectly with your favorite low carb soups, stews, and salads. They also make a fabulous keto breakfast or snack.

Tips:

  • Combining Flours: You really will have the best luck with this flour combination. If you prefer to not use coconut flour, you can replace it with another ¾ cup almond flour, but your carb count will be higher.
  • Skip the sweetener and add garlic: Most people think of scones as sweet, but there are any number of wonderful savoury versions. Obviously you need to leave out the sweetener. I like to add a little garlic powder to enhance the savory flavours.
  • How much baking powder? It surprises some people to see a full tablespoon of baking powder in a recipe like this. I am sometimes asked if it’s a typo and I really meant a teaspoon. No, it’s not a typo. Keto flours like almond and coconut flour need a little more encouragement to rise properly.
  • A little melted butter brushed over the top helps your seasoning stick properly.

Ingredients:

  • 2 cups almond flour
  • ¼ cup coconut flour
  • 1 tablespoon baking powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • 2 large eggs
  • ¼ cup heavy whipping cream
  • 1 tablespoon butter melted
  • 1 to 2 tablespoon Everything Bagel Seasoning (see recipe notes for homemade seasoning)

Instructions:

Preheat oven to 325F and line a large baking sheet with parchment or a silicone liner. Lightly grease the parchment or silicone mat.

In a large bowl, whisk together the almond flour, coconut flour, baking powder, garlic powder, and salt. Stir in the eggs and whipping cream, and mix until the dough comes together.

Gather the dough together and turn out onto the prepared baking sheet. Using lightly greasded hands, pat into a rough rectangle about 10 by 8 inches.

Use a sharp large knife to cut into 6 squares. Then cut each of those squares diagonally into two triangles. Gently lift the scones and distribute them around the pan.

Brush the tops with the melted butter and sprinkle with everything bagel seasoning. Press lightly to adhere.

Bake 20 to 25 minutes, until golden brown and just firm to the touch. Remove and let cool. Serve with your favorite soup or salad!

1T Poppy seeds
1T Sesame seeds
1.5 Tsp Dried garlic
1.5 Tsp Dried onion
1.5 Tsp Coarse salt
