Ingredients:

  • 1 cup low-fat cottage cheese
  • 2–3 tbsp sugar-free sweetener (Swerve or monk fruit)
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • 1–2 tbsp unsweetened Greek yogurt (optional)
  • Fresh berries for topping



Instructions:

  1. Add cottage cheese, sweetener, vanilla, and lemon juice to a blender.
  2. Blend for 45–60 seconds until completely smooth and creamy.
  3. Pour into two ramekins and refrigerate for 1 hour to set.
  4. Top with berries, sugar-free jam, cinnamon, or chocolate shavings.
