Serves: 4 small or 2 regular smoothies
Ingredients:
- 3 cups frozen pineapple
- 1 cup baby spinach (can use kale)
- 1 cup coconut milk (like the refrigerated carton kind)
- 1 cup water
- 2-4 Tbsp fresh mint
- optional: 2-4 Tbsp protein powder (or unflavored vegan protein powder)
Instructions:
Place all ingredients in a blender. Puree until completely smooth.
