SERVES 1 | PREP TIME: 15 MIN. | TOTAL TIME: 30 MIN.
Ingredients:
- 6 oz fresh halibut
- ¼ teaspoon garlic powder
- ¼ teaspoon Italian seasoning
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
Rice:
- 1 serving cooked brown rice
- 1 cup fresh basil leaves
- 2 large cloves garlic
- 1 ½ - 2 tablespoons fresh lemon juice
- ½ tablespoon nutritional yeast
- ¼ teaspoon sea salt
- ½ tablespoon water
- ½ large green zucchini, sliced into approximately ½ inch slices
- ½ large yellow zucchini, sliced into approximately ½ inch slices
- ½ cup grape tomatoes
- Sea salt and pepper to taste
Directions:
Preheat oven to 400F. Line a baking sheet with parchment paper and place halibut on top. Combine garlic powder, Italian seasoning, salt and pepper in a small bowl and mix well. Rub spice mixture on the fish.
Bake at 400F for 10 minutes (time will vary slightly depending on the thickness of the fish). Broil for one minute. (optional)
In the meantime, combine basil, garlic, lemon juice, nutritional yeast, sea salt and water in a blender and process until smooth. Add to cooked brown rice.
To prepare the vegetables, heat up a nonstick skillet. Season the zucchini slices with salt and pepper and place them on the skillet. Cook over medium heat, one to two minutes per side, until tender but slightly firm (add water as needed, one tablespoon at a time if once the zucchini starts to brown to keep them from burning). Remove zucchini slices from pan and repeat the process with the tomatoes. Cook until they start to blister.
To assemble the place, place basil brown rice at the bottom, fish on top and vegetables on the side.
