Preparation Time: 10 min Bake Time: 15 minutes Makes: 12 muffins
Ingredients:
- 1 cup Plain Greek Yogurt
- 1/2 cup Skim Milk or Unsweetened Almond Milk
- 2 Eggs
- 1/3 cup Melted Coconut Oil or Canola
- 1 tsp Vanilla
- 1 cup Flour
- 1 scoop/packet BiPRO Chocolate
- 1/2 cup Cocoa Powder or Cacao
- 1/2 cup Sugar or Xylitol
- 1 tsp Baking Soda
- 1/2 cup Baking Chocolate Chips
Instructions:
1. Preheat oven to 375°F.
2. Combine Greek yogurt, milk, eggs, oil and vanilla. Whisk until smooth.
3. Sift together flour, BiPro Chocolate, cocoa, sugar and baking soda. Add to yogurt mixture and mix well. Stir in baking chips.
4. Spoon into 12 greased or paper lined muffin tins. Sprinkle with additional baking chips or
chopped nuts if desired.
5. Bake at 375°F for 15 minutes. Cool 10 minutes before removing from pan.
