Sun Dried Tomato Quinoa


Sun Dried Tomato and Olive Quinoa - Perfect as a gorgeous side or toss in some white beans or chicken for a fabulous main!

Feel free to toss in some white beans or cooked chicken to upgrade this to a main dish!


Serves: 4-5 servings as a side

INGREDIENTS
  • 2 cups cooked quinoa
  • ½-1 cup fresh spinach, cut into ribbons or torn into small pieces
  • ¼-1/2 cup kalamata olives (or your favorite olives)
  • ¼-1/2 cup sun dried tomatoes packed in olive oil, drained and minced
  • 2-4 Tbsp fresh basil, cut into ribbons or torn
  • salt and pepper, to taste
  • juice of ½-1 lemon
  • olive oil, as needed

Sun Dried Tomato Quinoa - So good as a side but also great for packing in lunches! From www.onelovelylife.com

INSTRUCTIONS

Stir all the ingredients together until well combined. Taste and adjust amounts or seasonings as desired. Serve warm or cold!
