Feel free to toss in some white beans or cooked chicken to upgrade this to a main dish!
Serves: 4-5 servings as a side
INGREDIENTS
- 2 cups cooked quinoa
 - ½-1 cup fresh spinach, cut into ribbons or torn into small pieces
 - ¼-1/2 cup kalamata olives (or your favorite olives)
 - ¼-1/2 cup sun dried tomatoes packed in olive oil, drained and minced
 - 2-4 Tbsp fresh basil, cut into ribbons or torn
 - salt and pepper, to taste
 - juice of ½-1 lemon
 - olive oil, as needed
 
INSTRUCTIONS
Stir all the ingredients together until well combined. Taste and adjust amounts or seasonings as desired. Serve warm or cold!
