TURKEY CUCUMBER ROLL-UPS

Ingredients:
- 1 cucumber
- 4 ounces sliced nitrate-free deli turkey
- 1/4 bell pepper, cut in strips
- 1 or 2 radishes, cut into thin sticks
- Shredded lettuce
Using a vegetable peeler, take 1 lengthwise slice of peel off of the cucumber and discard. Use the peeler to continue cutting thin lengthwise slices of cucumber, avoiding the seeded middle.
Arrange the cucumber slices side-by-side on a flexible cutting board or piece of parchment paper. Layer the meat evenly on top.
Add your vegetables in a thin line across the cucumber slices. Lift up the edge of the cutting board or parchment paper to help you fold the roll onto itself. Roll tightly. Insert a toothpick through the center of each cucumber slice.
Using a sharp knife, slice between each cucumber slice. Serve and enjoy!
