
This is a fresh, mild salsa, and we usually skip anything spicy when making it. You can certainly add in a bit of jalapeño or green chile for some kick, if you like!  I add all of the optional ingredients for more flavor, but that's just me, I tend to like to spice things up!
This is a great way to use those beautiful tomatoes that you get in summer. You can easily can this recipe too to have all winter long.
Serves: 1½ - 2 cups
INGREDIENTS
- 2 cups fresh tomatoes, halved or quartered (or in a pinch use canned whole tomatoes or diced)
 - 3-4 Tbsp diced onion (I usually use red)
 - ¼ cup fresh cilantro
 - juice of 1 lime - (must be FRESH do not buy any lime or lemon juice in a plastic fake fruit container, ever.)
 - sea salt, to taste
 - 1 tsp olive oil (optional)
 - 1/2 - 1 tsp minced jalapeño (optional)
 - 1/2 - 1 tsp minced garlic (optional)
 
INSTRUCTIONS
Place all ingredients in a food processor or blender. Pulse a few times until you've reached your desired texture. Add salt, to taste.
Serve on anything!
