Mango Lime Smoothie Popsicle – Bright, tropical flavor, a nutritional punch from greens, and a velvety-smooth texture make these green smoothie popsicles the perfect summer treat.
These mango lime smoothie popsicles are divine, and the perfect vehicle for blending in some greens. Even if your children are veggie-averse and balk at the sight of green veggies, I doubt they’ll have any issue with a green lime Popsicle. The mango and orange flavors are sunny and bright, and you can add as much lime juice and zest as you like.
Using 1 lime in this recipe will give a nice citrus punch to cut through the mango flavor. 2 limes will make lime the predominant flavor with a mango undertone. You decide!
Serves: 4-5
INGREDIENTS
- 1 cups frozen mango
- ½ banana, sliced or broken into pieces
- ¾-1 cup baby spinach
- ½ cup orange juice
- zest and juice of 1-2 limes
INSTRUCTIONS
Place all ingredients in a blender.* Puree 45-60 seconds or until very smooth, scraping down the sides as necessary. Drink as a smoothie, or pour into popsicle molds and freeze 3-4 hours (or until solid).
*Note: If you don't have a high-speed blender, try blending just the spinach and juice together before adding the other ingredients. This will help break the spinach up a little better.
