Chocolate Cherry Hazelnut Bars

Chocolate Cherry Hazelnut Bars - An amazing healthy indulgence. // One Lovely Life

These taste so satisfying when you want something sweet without ruining your healthy eating plans. The hazelnuts really come to bat here and give an awesome, decadent Nutella vibe, but they aren’t filled with ten pounds of sugar, and they’re gluten and dairy free!

Perfect for snacks, picnics, or packed lunches, these snack bars really have been a go-to for me.

If you’re avoiding all added sugars, you can certainly skip the chocolate chips, or swap them out for 1-2 Tbsp unsweetened cocoa powder or a few tablespoons of carob chips. You’ll also want to be sure your dried cherries are unsweetened. The hazelnut-cherry combo is my favorite part of these beautiful little bars, so they’ll still be amazing. Those chocolate chips are just a sweet bonus.

Serves: 16 servings

INGREDIENTS

  • 1 cup dried cherries
  • 1 cup dates, pits removed
  • ½ cup toasted hazelnuts
  • ½ cup almonds (or, you can use all hazelnuts)
  • ¼ cup chocolate chips, optional (can substitute 1-2 Tbsp unsweetened cocoa powder or carob chips)

INSTRUCTIONS

Place cherries, dates, hazelnuts, and almonds in a food processor. Pulse and puree until the mixture comes together, 2-4 minutes. Add chocolate chips and pulse a few more times to combine.

Press mixture into an 8x8" baking dish (lined with parchment, if desired) or roll into 1" balls.
