Parmesan Crusted Lemon Salmon





I love salmon and it sounded good tonight for dinner so I thought, what could I do to make this really good and different?  Why not modify the recipe that I make for Parmesan-Crusted Pork Chops for salmon?  

It turned out sooooo good!  Here's how I did it....

INGREDIENTS

  • 1/2 cup egg whites or 1 egg beaten
  • 1 piece toasted sprouted grain bread
  • 3/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon lemon zest
  • 1 tablespoon Italian Seasoning
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 salmon fillets
  • fresh Italian parsley for garnish
  • 2 lemon wedges
DIRECTIONS

Set out 3 bowls or pie plates/tins for the breading.

Whisk egg in a bowl or pour egg whites into a the 1st bowl.

Place bread into a mini-processor to make bread crumbs. Place in the 2nd bowl. Combine 1/2 tablespoon lemon zest, Italian seasoning, garlic powder, salt and pepper and mix into the bread crumbs.

Put Parmesan cheese and 1/2 tablespoon of lemon zest into a 3rd bowl.  Mix together.

Coat the salmon completely with the cheese, patting it to adhere on all sides.  Then, dip the salmon into the eggs on all sides. Then coat completely with the bread crumb mixture on all sides to adhere.

Heat 2 tablespoons of olive oil in a large skillet over medium heat.  Add salmon and cook until golden brown, turning all all sides.  About 2 minutes per side.  

Transfer salmon to plates to serve with lemon wedges.  I strongly suggest squeezing FRESH lemon juice over the salmon before eating and top with some fresh italian parsley.
