Cherry Chocolate Chip Popsicles

A little creamy, a little tangy, a lot summery! 
Cherry Chocolate Chip Popsicles will knock your socks off!

Cherry Chocolate Chip Popsicles (GF, Vegan) // One Lovely Life


It’s hard to feel bad about eating a smoothie frozen in a popsicle mold, especially when they’re almost always just naturally sweet from the fruit in them. We only occasionally need to add a little honey or pure maple syrup if the fruit’s not quite sweet enough.

Serves: 4

INGREDIENTS

  • 1 (10 oz) bag frozen sweet cherries
  • ½ cup almond milk, more if needed (I prefer unsweetened)
  • ⅛ tsp almond extract
  • ¼ tsp vanilla extract
  • ¼ cup mini chocolate chips (I used Enjoy Life brand)
  • 1 tsp honey or pure maple syrup (if cherries are not sweet enough)

INSTRUCTIONS

Place cherries, almond milk, almond and vanilla extracts in a blender. Blend until very smooth, adding more almond milk if necessary. Taste mixture. If not sweet enough, you can add 1-2 tsp of pure maple syrup (mind is usually fine without it, but some bags of cherries are sweeter than others. It's based on your preference.)

Add mini chocolate chips and pulse to incorporate and slightly break up chips.
Pour mixture into popsicle molds and freeze 2-3 hours or until solid.
